Politically Incorrect-Southern Fried Chicken? Never!

The Denver School System posts the lunch schedule each week so parents can see what choices their kids have and send a lunch if the selection is not acceptable. Various food allergies need to be checked out and responsible parents want to keep their kids well by avoiding foods that spark allergic reactions.

Religious restrictions also play a part in some kids lunches. There is a new meal consideration that now needs to be considered by the school menu planners. Insensitivity in a new ingredient to be avoided.

In honor of Martin Luther King the Denver school system decided to have a Southern style lunch next Tuesday. Southern Fried Chicken and collard greens were planned. An immediate outcry with charges of racial bias and insensitivity to the solemn nature of the day were raised

I listened to one woman who with passion decried the thought that fried chicken and greens would be eaten anywhere in the country in conjunction with a remembrance of Dr. King. The outcry was so loud from the politically correct crowd that the timid school district removed the fried chicken and collard greens and replaced it with peanut butter sandwiches. I am not sure if they checked with the peanut allergy groups before making the menu change.

Harry Reid was strongly criticized for comments about Obama during the primaries . Reid apparently said that Obama could be a good candidate since he had light color and did not speak with a Negro accent. I am no fan of Reid but can clearly see that there was a racial aspect of his comment that was not in any way racist. His comments were true and obviously dealt with electability issues.
There was a call for him to resign because of his insensitive comments. I would like Reid to resign for many reason but this benign comment was not one of them.

We have allowed ourselves to have our speech and activities guided by a growing group of politically correct dimwits, Southern Fried Chicken is good anytime and I’ll bet it is being served in many of the King dinners in Black Churches throughout the South. All over the South there are Prayer Breakfasts on MLK’s day. Would it be insensitive to have some grits with the eggs? I think it would be thought as insensitive in most of the South if the grits weren’t there.

Looking ahead on the calendar let me clear the air on Corned Beef and Cabbage. If you want to serve it at lunch on St. Patrick’s Day, go right ahead. I won’t be outraged nor would St. Patrick. I’m sure King would dig into the Chicken if he could and with peanut butter sandwiches on the school menu he would go out to lunch.

If a school lunch of corned beef is served as the traditional Irish celebration meal. I think that the green beer should probably be eliminated
If all the talk about Southern Fried Chicken is stimulating a desire for the dish here is a recipe that rises above the Political Correct nonsense over school lunch on the day we honor Martin Luther King.
